I have already built an AK and an AR15 and now I would like to build a 1911 pistol from a kit. I checked gunbroker and they were very limited. Were is the best place to purchase a 1911 pistol kit?

First thing you need to know, 1911s are not like your rifles. It's not a lego set. Most parts needs to be fitted, so you can't just slap them together and expect it all to work.

If you want parts from the same manufacture, you might look at Brownells. They have a "kit" from Wilson.

THEY'RE NOT!???? YOU'RE KIDDING RIGHT!???? LOL! Just kidding...LOL!

I second knedrgr's advice, if you want parts check out Brownells.com, but building a 1911 safely is not like a kit rifle...
