With the vast array of 1911 manufacturers out there, are the internal parts the same or do different brands install different guts? I understand that some pistols come with better fitted parts or machined parts or MIM. But, if I took a Tisas and Nighthawk apart side by side would the internals look the same?

The internals will pretty much look the same...but not everyone makes their parts to the same dimensions. Colt has its own dimensional standards for its parts...S&W has their own...same with Ruger and everyone else...even if they look the same. Aftermarket suppliers tend to make their parts on the "fat" side so they can be fitted to an individual gun.
Never expect parts from one to fit exactly without some fitting work in a different gun.
