    Shrimp stock the basis for many fine Cajun/Seafood dishes!
    3 Gallons filtered water
    5 Lbs. small 150 Gulf shrimp
    4 Medium Vidalia Onions, peeled & quartered
    6 ribs of celery, cut into large pieces
    5 cloves of garlic quartered unpeeled
    6 Carrots cut into large pieces
    Start with cold water, add ingredients.
    Bring to a boil then turn down and simmer for 4-8 hours adding water as needed to make one gallon of stock.
    Strain into cool pot using painter's strainer sack
    Put in one quart aluminum disposable loaf pans
    Freeze overnight
    Remove blocks of stock from pans and vacuum seal for future use.

    Running the mash through a painter's strainer sack makes for some clean stock and allows you to squeeze out all that good liquor!

    A little over a gallon of stock in the freezer before vacuum sealing.

    So our double wall ovens died a while back. Told my wife to buy something cool since the plan is to sell the house in 4-5 years and down size. Thought a nicer oven might be a good selling point. So we bought double ovens that bake, convection and are big ass air fryers. Never air fried but people rave about them. Behold the easy method for wings.

    Found a deal. $6.99/lb for a whole boneless ribeye. Turned it into a dry rub roast, a smaller bourbon/honey marinated roast and 4 nice steaks. Had some friends over for ribeye sliders and have leftovers for fajitas tonight. The rest will be vacuum packed and saved for another day.

    That looks great! If you don't mind me asking, how do you keep the chicken skin from sticking to the grill. I never figured that out. TIA...

    80CCD950-1DFB-4541-A87C-D5FAC2234D68.jpeg My Mother died prematurely twenty years ago. She made this red steak when we were kids, but nobody ever got the recipe. My wife figured out a knock-off recipe for it a couple years ago, and I can’t tell the difference. Eye of round steak simmered with onions until it’s fork tender.

    Smoke at 250° then crank it up to 350° to crisp the skin.....the low temp at start should start to cook with out it sticking!
