I wondered this as yesterday I inquired at a local GS with a smith about welding up a grip safety that didn't pass the test. He refused to work on anything 1911. I only wanted leading edge and underside welded up for an extra .010 to file fit. I would do the fitting, only needed welding no smith"ing", so what did it matter that it was for a 1911? The owners are early thirties or so and the shop is heavy on the tacticool, action gunning merch.
Processed cheese is gross. No big loss there.
IMHO a smith that can't/won't work on 1911's is similar to a barber that can't/won't do a skin fade. Not much interest in either.
